Spiced Apple Compote

This compote is as delicious as apple pie and is as good with toast as it is on frozen desserts.

INGREDIENTS | YIELD: 2 CUPS

  • 2 pounds tart apples, peeled, cored, and chopped ⅓
  • cup brown sugar
  • ¼ cup water
  • 2 teaspoons cinnamon
  • ¼ teaspoon ginger
  • 1 teaspoon vanilla

 

DIRECTIONS:

  1. Place all ingredients except vanilla in a medium saucepan and cook over medium heat. Allow to simmer for about 30 minutes, until apples are very tender, and sauce is thickened.
  2. Remove from heat and stir in the vanilla. Let cool to room temperature.
  3. Refrigerate, covered, until needed.
