This compote is as delicious as apple pie and is as good with toast as it is on frozen desserts.
INGREDIENTS | YIELD: 2 CUPS
- 2 pounds tart apples, peeled, cored, and chopped ⅓
- cup brown sugar
- ¼ cup water
- 2 teaspoons cinnamon
- ¼ teaspoon ginger
- 1 teaspoon vanilla
DIRECTIONS:
- Place all ingredients except vanilla in a medium saucepan and cook over medium heat. Allow to simmer for about 30 minutes, until apples are very tender, and sauce is thickened.
- Remove from heat and stir in the vanilla. Let cool to room temperature.
- Refrigerate, covered, until needed.
