Vanilla brings out the flavor of ripened peaches in this sweet and gentle compote. It is superb served with Simple Vanilla Ice Cream but it’s a true delight with caramel-based ice creams or gelato.
INGREDIENTS | YIELD: 3 CUPS
- 1 pound peaches, peeled, pitted, and chopped
- ½ cup brown sugar
- ¼ cup water
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ginger
- 1 teaspoon vanilla
INSTRUCTIONS:
- Place all ingredients except the vanilla in a medium saucepan, and cook over medium-high heat. Allow to simmer for 13–15 minutes, until sauce is thickened.
- Remove from heat and stir in vanilla. Let cool to room temperature.
- Refrigerate, covered, until needed.
