Peach Compote

Vanilla brings out the flavor of ripened peaches in this sweet and gentle compote. It is superb served with Simple Vanilla Ice Cream but it’s a true delight with caramel-based ice creams or gelato.

INGREDIENTS | YIELD: 3 CUPS

  • 1 pound peaches, peeled, pitted, and chopped
  • ½ cup brown sugar
  • ¼ cup water
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 1 teaspoon vanilla

 

INSTRUCTIONS:

  1. Place all ingredients except the vanilla in a medium saucepan, and cook over medium-high heat. Allow to simmer for 13–15 minutes, until sauce is thickened.
  2. Remove from heat and stir in vanilla. Let cool to room temperature.
  3. Refrigerate, covered, until needed.
