SANTA MARIA–STYLE SALSA
Makes about 4 cups
- 2 large ripe tomatoes, diced (about 2½ cups)
- Kosher salt
- 1 stalk celery, peeled and diced (about ½ cup)
- 4 scallions, chopped (about ½ cup)
- 1 California chile (poblano or Hatch can be substituted), diced (about ½ cup)
- ¼ cup chopped fresh cilantro
- 2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
- 1 tablespoon red wine vinegar
- 1 teaspoon Worcestershire sauce
INSTRUCTIONS:
Preparing the Tri-Tip:
- Light a chimneyful of coals and wait until they’re covered with gray ash. Spread the hot coals evenly on one half of the grill grate. Place the cooking grate in position, cover the grill, and allow it to preheat for 5 minutes. If using a gas grill, heat one set of burners to high and leave the others off. Clean and oil the grilling grate to prevent sticking.
- Rub the tri-tip roast all over with the minced garlic, ensuring an even distribution. Season the roast generously with kosher salt and freshly ground black pepper.
- Place the seasoned tri-tip on the cooler side of the grill. Cover the grill and cook the roast, turning and flipping occasionally, until the internal temperature reaches 105°F to 110°F in the thickest part. This typically takes around 20 to 30 minutes. If using a charcoal grill and the coals lose their heat, temporarily remove the roast, add another 4 cups of coals, and wait for 5 minutes to allow them to heat up. Then, return the meat to the hot side of the grill.
- Continue to cook the tri-tip, turning it regularly, until the exterior develops a beautiful char and the center reaches an internal temperature of 120°F to 125°F. This final stage usually takes about 5 to 8 minutes longer.
- Transfer the grilled tri-tip to a cutting board and let it rest for 10 minutes to allow the juices to redistribute. Once rested, thinly slice the meat.
Serving the Santa Maria–Style Grilled Tri-Tip:
- Arrange the thinly sliced tri-tip on a serving platter, displaying its enticing charred exterior.
- Serve the grilled tri-tip with a side of Santa Maria–Style Salsa, allowing the refreshing flavors of tomatoes, celery, scallions, chile, cilantro, garlic, vinegar, and Worcestershire sauce to enhance each bite.
- Gather around the table and enjoy the delightful harmony of smoky, tender tri-tip with the zesty salsa, celebrating the essence of Santa Maria–style barbecue.
SANTA MARIA–STYLE SALSA:
- In a colander, combine the diced tomatoes with ½ teaspoon of kosher salt and toss to coat. Place the colander in the sink and allow the tomatoes to sit for 30 minutes to drain excess liquid.
- In a medium bowl, combine the drained tomatoes, diced celery, chopped scallions, diced California chile, cilantro, minced garlic, red wine vinegar, and Worcestershire sauce. Toss all the ingredients together.
- Season the Santa Maria–Style Salsa with salt to taste, ensuring the perfect balance of flavors.
- Allow the salsa to sit at room temperature for at least 1 hour before serving. This resting period allows the flavors to meld together beautifully.
- Any leftovers can be refrigerated in a sealed container and enjoyed for up to 5 days.
