Rumaki

Take a culinary journey back in time with Rumaki – a classic dish that marries an array of flavors and textures into a single, irresistible bite. If you’re a fan of chicken livers, get ready to embrace this nostalgic favorite that blends savory and sweet in the most delightful way. With a modern twist, we’ve lightened up the recipe by using turkey bacon, ensuring that each bite remains as delectable as the original. In this recipe, turkey bacon’s smoky essence complements the tender chicken livers and the crispness of water chestnuts. Whether you’re reliving the past or experiencing Rumaki for the first time, you’re in for a treat that’s a perfect fit for your gluten-free lifestyle.

Yield: approx. 24 rumaki

Prep Time: 1 hour 15 minutes

Cooking Time: 10–12 minutes per batch

Total Time: 1 hour 35–39 minutes

INGREDIENTS:

  • 10 ounces raw chicken livers
  • 1 can sliced water chestnuts, drained
  • ¼ cup low-sodium teriyaki sauce
  • 12 slices turkey bacon
  • Toothpicks

INSTRUCTIONS:

  1. Prepare the Chicken Livers: Cut the chicken livers into approximately 1½-inch pieces, making sure to trim out any tough veins as you slice.
  2. Marinate the Ingredients: Place the sliced chicken livers, drained water chestnuts, and low-sodium teriyaki sauce in a small container with a lid. If needed, add an additional tablespoon of teriyaki sauce to ensure the livers are well covered. Refrigerate this mixture for 1 hour to infuse the flavors.
  3. Prepare the Turkey Bacon: Cut each slice of turkey bacon in half crosswise. This will be used to wrap around the chicken livers and water chestnuts.
  4. Wrap and Secure: Take one piece of chicken liver and one slice of water chestnut from the marinating mixture and wrap them together in a half slice of turkey bacon. Secure the wrap with a toothpick.
  5. Cook the First Batch: As you wrap half of the chicken livers, place them in a single layer in the air fryer basket.
  6. Cook at 390°F: Preheat your air fryer to 390°F (200°C) and cook the wrapped livers for 10 to 12 minutes. This will ensure the chicken livers are fully cooked and the bacon is perfectly crispy.
  7. Wrap and Cook the Second Batch: While the first batch is cooking, continue wrapping the remaining chicken livers. Once the first batch is done, remove them from the air fryer and repeat step 6 to cook the second batch.

From the marination of teriyaki to the careful wrapping of turkey bacon, every step of creating Rumaki is a labor of love. The delightful blend of flavors and textures in each bite will transport your taste buds to another era. Whether enjoyed as an appetizer, a party favorite, or a unique treat, these gluten-free Rumaki bites are a perfect example of how timeless recipes continue to delight across generations.
