Crispy, sweet onion rings make a delicious topping for sandwiches, meats, and baked or mashed potatoes.
SERVES 4
INGREDIENTS:
- 2 large onions, sliced ¼ inch thick
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
INSTRUCTIONS:
- Preheat the oven to 450°F. Lightly oil a large shallow roasting or half sheet pan.
- Brush the onion slices with the oil and arrange in a single layer in the pan. Sprinkle with salt and pepper to taste.
- Roast for about 15 minutes. Turn and roast for another 5 to 10 minutes, until the onion slices are tender and well browned.
- Transfer the slices to a serving bowl or platter. As you move them, the slices will separate into rings. Serve hot.
