Roasted Onion Slices

Crispy, sweet onion rings make a delicious topping for sandwiches, meats, and baked or mashed potatoes.

SERVES 4

 

INGREDIENTS:

  • 2 large onions, sliced ¼ inch thick
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper

 

 

INSTRUCTIONS:

  1. Preheat the oven to 450°F. Lightly oil a large shallow roasting or half sheet pan.
  2. Brush the onion slices with the oil and arrange in a single layer in the pan. Sprinkle with salt and pepper to taste.
  3. Roast for about 15 minutes. Turn and roast for another 5 to 10 minutes, until the onion slices are tender and well browned.
  4. Transfer the slices to a serving bowl or platter. As you move them, the slices will separate into rings. Serve hot.
