INGREDIENTS:

Roasted Chestnuts

  • 570g uncooked chestnuts (to make 400g cooked chestnuts)

 

Asian-Style Chicken

  • 1/4 cup kecap manis
  • 1/3 cup sweet chili sauce
  • 1 tsp sesame oil
  • 2 garlic cloves, finely chopped
  • 2 tsp finely grated fresh ginger
  • 2 tbs lime juice
  • 8 chicken thighs (bone-in), fat trimmed
  • 400g roasted chestnuts
  • 1/4 cup coriander leaves
  • Steamed rice and Asian greens, to serve

 

INSTRUCTIONS:

Roasted Chestnuts

  1. Preheat your oven to 200°C / 180°C fan-forced. Cut a shallow cross into the flat side of each chestnut shell.
  2. Place the prepared chestnuts onto a baking tray and bake them for 15-20 minutes or until the shells split open.
  3. Once the chestnuts are cooked, remove them from the oven and wrap them in a clean tea towel for 5-10 minutes. While the chestnuts are still warm, quickly peel off the outer brown shell and remove the papery thin skin underneath.

Asian-Style Chicken

  1. In a bowl, combine the kecap manis, sweet chili sauce, sesame oil, finely chopped garlic, grated fresh ginger, and lime juice to create the flavorful marinade.
  2. Place the chicken thighs and roasted chestnuts into a large snap-lock plastic bag. Pour the kecap manis mixture into the bag with the chicken and chestnuts. Toss everything together to coat the chicken and chestnuts thoroughly in the marinade. Seal the bag and refrigerate it for 1 hour (or longer if time permits) to let the flavors infuse.
  3. Preheat your oven to 220°C / 200°C fan-forced. Transfer the marinated chicken and chestnut mixture to a large baking pan lined with non-stick baking paper. Roast the chicken and chestnuts, turning them occasionally, for 30-35 minutes or until the chicken thighs turn golden and are cooked through in the thickest part.
  4. Once the Asian-style chicken and chestnuts are roasted to perfection, remove them from the oven and sprinkle them with fresh coriander for a burst of aromatic freshness.
