INGREDIENTS:

  • 4 eggs
  • 2 tablespoons skim milk
  • Salt and pepper
  • Oil for misting or cooking spray
  • 4 flour tortillas
  • 4 tablespoons salsa
  • 2 ounces Cheddar cheese, grated
  • ½ small avocado, peeled and thinly sliced

 

INSTRUCTIONS:

  1. Begin by preheating your air fryer to 270°F, setting the stage for perfectly cooked eggs and quesadillas.
  2. In a bowl, beat together the eggs, skim milk, and a sprinkle of salt and pepper, creating a light and airy mixture.
  3. Lightly mist a 6 x 6-inch air fryer baking pan with cooking spray. Pour the beaten egg mixture into the pan.
  4. Cook the eggs for 8 to 9 minutes, stirring every 1 to 2 minutes to achieve the scrambled texture you prefer. Once cooked, set the eggs aside.
  5. Grab your flour tortillas and spray one side of each tortilla with oil or cooking spray. Flip the tortillas over to prepare the non-sprayed side.
  6. On one half of each tortilla, distribute a portion of the scrambled eggs, salsa, grated Cheddar cheese, and thinly sliced avocado, creating a flavorful filling.
  7. Carefully fold each tortilla in half, pressing down gently to create the classic quesadilla shape.
