INGREDIENTS:

  • 250g Copha
  • 4 tbsp cocoa powder
  • 80g castor sugar
  • 1 tbsp rum or coffee
  • 250g shortbread biscuits, roughly chopped
  • 50g red jelly lollies, chopped

TOPPING:

  • 30g Copha
  • 125g milk chocolate bits
  • 50g popping candy pieces

PREPARATIONS:

  1. Line the base and sides of a 30 x 15cm slab tin with baking paper.

METHOD:

  1. In a large bowl, combine cocoa powder and castor sugar, mixing well.
  2. Melt Copha in a small saucepan over low heat. Pour the melted Copha into the bowl with cocoa powder and sugar, mixing until well combined.
  3. Stir in the rum (or coffee) and beaten egg.
  4. Fold in the chopped biscuit pieces and lollies, ensuring even distribution.
  5. Press the hedgehog mixture firmly into the lined slab tin.

ICING:

  1. Melt the remaining Copha and chocolate in a bowl. Microwave on 50% power for 1 minute, stirring until well combined.
  2. Spread the topping mixture evenly over the hedgehog base.
  3. Sprinkle popping candy pieces over the topping, creating a delightful surprise.
  4. Allow the hedgehog slice to set by refrigerating it for several hours.
  5. Once set, slice the hedgehog into either squares or fingers using a warm, wet knife.
