INGREDIENTS

  • 8 Shrimp (cut 4 into small pieces and leave 4 whole)
  • 1 egg
  • 1 1/2 cups of rice
  • 1/4 cup diced onions
  • 1 tablespoon Thai soy sauce
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 1/8 tsp salt
  • 1 tsp curry powder
  • 1/4 tsp White pepper
  • 1/2 cup Pineapple, fresh if you can, cut into small pieces
  • 1/3 cup roasted or fried cashews, unsalted
  • 2 green onions, chopped
  • 1/2 cup tomatoes, seeds removed, cut into half-inch cubes
  • Cucumber slices for serving

 

PREPARATION

  • Cook the rice and drain well. Avoid overly wet rice for this dish.
  • Chop up 4 of the shrimp into small pieces.
  • Dice the onions and tomatoes, removing the tomato seeds, and put them together in a small bowl.
  • Combine all the dry ingredients – curry powder, white pepper, sugar, and salt – in a separate small bowl.
  • Mix all the wet ingredients together, including the soy sauce and fish sauce.

 

COOKING INSTRUCTIONS

  1. Heat a wok or large pan on high heat and add 2 tablespoons of oil.
  2. Fry the whole shrimp completely and remove them, setting them aside. Then, fry the cut-up shrimp and set them aside as well.
  3. Add more oil to the pan if needed. Crack the egg into the pan and lightly scramble it. When half-cooked, add the cooked rice and mix together.
  4. Add the diced onions and stir-fry until softened and fragrant.
  5. Add the curry powder, white pepper, sugar, salt, soy sauce, and fish sauce to the rice. Toss and mix until everything is well-distributed and the rice is evenly coated with the seasonings.
  6. Incorporate the cashews, pineapple, and small pieces of shrimp. Stir-fry until the pineapple slightly caramelizes.
  7. Turn off the heat and add in the tomatoes and green onions, mixing gently to retain their freshness.
