This rich, nutty and creamy recipe of pear pecan pie is simply to die for. It is a special occasion dessert that just melts in your mouth and addition of caramel sauce is like cherry on top. It takes some time but very easy and worth it. This is surely an indulgent dessert recipe. You should just go straight to the kitchen and make this right away. YES you heard it right because it is that good!
The secret behind getting the perfect crust is to not over work the dough. Keep the ingredients as cold as possible to get flaky texture.

Ingredients:
FOR THE RICH SHORTCRUST PASTRY:
- 225 g all-purpose flour
- 110 g cold butter
- 1 tablespoon caster sugar
- 1 egg yolk
- 1/4 tsp almond extract ,optional
- 4 tsp ice cold water
FOR THE FILLING:
- 2 medium ripe pears ,sliced
- 60 g butter
- 100 g brown sugar
- 1 tablespoon golden syrup
- 150 ml cream
- 2 medium eggs, beaten
- 125 g pecans ,roughly chopped
Instructions:
- Preheat oven to 350F. You will need a 9 inch pie dish.
- In a large mixing bowl, work the butter into the flour with your hands until you have fine crumbs of butter.
- Stir in the sugar, almond extract and egg yolk into the flour mixture.
- Now add the ice water and work the mixture until dough is formed. Give it the shape of a ball.
- If it is too wet or too dry then add extra flour or water accordingly.
- Transfer the ball of pastry into a plastic bag and refrigerate for 20 minutes to let it set. Roll out the pastry on a clean, floured surface. Make sure it is about 2mm thick.
- Place the pastry dough in to pie dish and place a piece of wax proof paper over the pastry. Weight it down with some rice and bake the pastry for 10 – 12 minutes.
- After that remove the paper and bake for another 5 minutes until light golden.
- Remove from the oven and set aside.
- In a medium saucepan, place the sliced pears with enough water to almost cover the pears, and let simmer for 15 minutes until tender.
- Drain to remove water and dry the pears with kitchen paper.
- In a saucepan melt butter, brown sugar and syrup until no lumps or granules are seen, then boil for 2 minutes. Pour in cream and simmer for 4 minutes. Stir and remove from the heat. Cool for about 10 to 12 minutes before beating in the eggs and pecans.
- Spoon the mixture into the baked pastry and add the pears in a circle design. Bake for 30 minutes until the top looks set. Cool for at least 20 minutes before serving.
- Serve with whipped cream or ice-cream according to your liking. Enjoy!
