Parmesan Bean Salad

This salad is filling enough to make a nice light lunch. his salad is a great way to add protein and fiber to your diet while enjoying a delicious and satisfying meal.

YIELDS: 4 servings, each with 12 grams of carbohydrates and 4 grams of fiber, for a
total of 8 grams of usable carbs and 9 grams of protein.

 

INGREDIENTS:

  • 1 pound bag frozen, crosscut green beans
  • 1/2 cup minced red onion
  • 4 tablespoons extra-virgin olive oil
  • 5 tablespoons cider vinegar
  • 1/2 teaspoon salt or Vege-Sal
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried ginger
  • 3/4 cup grated Parmesan cheese

 

 

INSTRUCTIONS:

  1. Steam or microwave the green beans until they’re tender-crisp.
  2. Let the beans cool a bit, then stir in the onion, oil, vinegar, salt, paprika, and ginger, then finally the Parmesan cheese. Chill well, and serve.
