Pan-Roasted Mushrooms With Thyme And Shallots

Mushrooms, with their earthy and umami-rich flavor, are a delightful addition to any meal. When cooked to perfection, they become tender and develop a deep, savory taste that’s simply irresistible. Pan-roasting mushrooms is a fantastic way to bring out their best qualities, creating a dish that’s both simple to make and incredibly delicious.

SERVES 4 TO 6

 

INGREDIENTS:

  • 1 tablespoon vegetable oil
  • 1½ pounds button or cremini mushrooms, cleaned and sliced into quarters
  • 1 medium shallot, finely minced (about ¼ cup)
  • 2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons soy sauce
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Heat the vegetable oil in a large nonstick skillet over high heat until shimmering.
  2. Add the mushrooms to the hot skillet and cook, tossing and stirring frequently, until they have released their moisture and the liquid has completely evaporated, about 8 minutes.
  3. Continue cooking the mushrooms, tossing and stirring frequently, until they develop a deep brown color, about 10 minutes longer.
  4. Add the finely minced shallot, minced garlic, and fresh thyme leaves to the skillet. Toss to distribute the ingredients evenly and cook for about 30 seconds, or until fragrant.
  5. Remove the skillet from the heat and add the soy sauce, fresh lemon juice, and unsalted butter. Toss the mushrooms until the butter is melted and creates a luscious coating.
  6. Season the pan-roasted mushrooms with salt and freshly ground black pepper according to your taste.
  7. Serve the pan-roasted mushrooms with thyme and shallots immediately as a delightful side dish or use them as a topping for steaks, poultry, or pasta.
