Serve this thick applesauce with roast pork or potato latkes or call it apple compote and serve it as a refreshing dessert. It’s a great way to use up any apples that are starting to go soft.
MAKES: about 1 cup
PREP TIME: 10 minutes
COOKING TIME: about 10 minutes
INGREDIENTS:
- 2 Granny Smith apples, cored and chopped, but not peeled
- ½ cup water
- ¼ cup granulated sugar
- 2 tsp freshly squeezed lemon juice
INSTRUCTIONS:
- In a medium saucepan, stir together the apples, water, sugar and lemon juice. Bring to a simmer over medium heat. Cook, covered, until the apples are very tender, about 8 minutes.
- Transfer the apple mixture to a food processor fitted with the steel blade or a blender. Process or blend until smooth.
- Rub the purée through a fine-mesh sieve to remove the apple peel and make the sauce completely smooth. (The applesauce can be refrigerated in an airtight container—preferably a glass one—for up to 1 week.)
