Old-Fashioned Applesauce

Serve this thick applesauce with roast pork or potato latkes or call it apple compote and serve it as a refreshing dessert. It’s a great way to use up any apples that are starting to go soft.

MAKES: about 1 cup

PREP TIME: 10 minutes

COOKING TIME: about 10 minutes

 

INGREDIENTS: 

  • 2 Granny Smith apples, cored and chopped, but not peeled
  • ½ cup water
  • ¼ cup granulated sugar
  • 2 tsp freshly squeezed lemon juice

 

 

INSTRUCTIONS:

  1. In a medium saucepan, stir together the apples, water, sugar and lemon juice. Bring to a simmer over medium heat. Cook, covered, until the apples are very tender, about 8 minutes.
  2. Transfer the apple mixture to a food processor fitted with the steel blade or a blender. Process or blend until smooth.
  3. Rub the purée through a fine-mesh sieve to remove the apple peel and make the sauce completely smooth. (The applesauce can be refrigerated in an airtight container—preferably a glass one—for up to 1 week.)

 

BAKING DAY SECRETS

  • We love the tart flavour of Granny Smiths, but feel free to use your favourite apple variety in this recipe. Each type of apple has its own flavour profile, making applesauce different every time you switch varieties.
