  • 2 cups dried, peeled mung beans, soaked overnight and drained
  • 4 ounces boneless pork loin, trimmed and finely chopped
  • ½ cup kimchi, rinsed, strained, and finely chopped, plus ½ cup of the kimchi pickling liquid
  • 1½ cups mung bean sprouts, chopped
  • 1 tablespoon salt
  • 6 scallions, halved lengthwise and cut into 1-inch pieces
  • 5 garlic cloves, finely chopped
  • Vegetable oil for cooking
  • ¼ cup soy sauce (or gluten-free soy sauce)
  • 1 tablespoon white vinegar

 

PREPARATIONS

  1. In a food processor, purée the soaked mung beans with 1¾ cups water until smooth.
  2. Transfer the mung bean puree to a large bowl and add the finely chopped pork, kimchi, kimchi pickling liquid, mung bean sprouts, salt, scallions, and garlic. Stir thoroughly to combine all the ingredients.
  3. Heat 2 tablespoons of vegetable oil in a medium nonstick skillet over medium heat.
  4. Working in batches and adding more oil as needed, pan-fry the pancakes, using 3 to 4 tablespoons of batter per pancake. Flip each pancake once and cook until they turn golden, for a total of 8 to 10 minutes each. Transfer the cooked pancakes to paper towels to drain.
  5. In a small bowl, stir together the soy sauce and white vinegar to create a flavorful dipping sauce.
