- 2 tbsp. olive oil
- 1 small onion, finely diced
- 4 cloves garlic, crushed
- 750 ml tomato passata
- Salt and pepper
- ½ cup coarsely chopped fresh basil leaves, plus extra for garnish
- 625 g fresh spinach & ricotta tortellini
- 1 ⅔ cups (150 g) Perfect Italiano™ Grated Mozzarella
INSTRUCTIONS:
- Heat the olive oil in a large frying pan over medium-high heat. Add the diced onion and crushed garlic. Cook, stirring frequently, for about 3 minutes or until the onion is softened.
- Pour in the tomato passata and add 1 cup of water. Bring the mixture to a boil, then reduce the heat to medium and let it simmer for about 10 minutes. Stir in the coarsely chopped basil leaves and season the sauce with salt and pepper according to your taste.
- Add the fresh spinach & ricotta tortellini to the simmering sauce. Continue cooking for about 3 minutes, or until the tortellini are tender and cooked through.
- Preheat your grill (broiler) to high. Carefully transfer the tortellini and sauce mixture to an ovenproof dish.
