INGREDIENTS:

  • 1 cup butter, at room temperature
  • 1 1/2 cups Splenda (or preferred sugar substitute)
  • 1 1/2 teaspoons blackstrap molasses
  • 2 eggs
  • 1 cup ground almonds
  • 1 cup vanilla-flavored whey protein powder
  • 1/4 cup oat bran
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts or pecans
  • 12 ounces sugar-free chocolate chips

 

INSTRUCTIONS:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, use an electric mixer to beat the room temperature butter, Splenda, and blackstrap molasses until the mixture becomes creamy and well blended.
  3. Gradually add the eggs, one at a time, beating well after each addition.
  4. In a separate bowl, combine the ground almonds, vanilla-flavored whey protein powder, oat bran, baking soda, and salt.
  5. Add the dry ingredient mixture to the butter-Splenda mixture in approximately 1/2-cup increments, beating well after each addition until fully incorporated.
  6. Stir in the chopped walnuts or pecans and the sugar-free chocolate chips. If you need to make your own sugar-free chocolate chips, follow the instructions provided in the note.
  7. Prepare a cookie sheet by spraying it with nonstick cooking spray. Drop rounded tablespoons of dough onto the sheet. Note that these cookies will not spread as much during baking, so flatten them slightly if you prefer a flatter appearance.
  8. Bake the cookies in the preheated oven for about 10 minutes, or until they turn a delightful golden color.
  9. Allow the cookies to cool on the baking sheets for a couple of minutes before transferring them to wire racks to cool completely.
