INGREDIENTS:
- 1 lb. (450 g) squid
- 9 oz. (250 g) red mullet
- 7 oz. (200 g) prawns
- 3 1/2 oz. (100 g) anchovies
- 5 oz. (150 g) sardines
- 2/3 cup (100 g) semolina flour
- Oil for frying as needed

INSTRUCTIONS:
- Clean the squid by removing the skin from the body and cutting the tentacles from the body.
- Flip back the tentacles and squeeze out and discard the beak located in the center of the tentacles. remove the eyes, the entrails, and the transparent inner cartilage.
- Cut the body of the squid into rings (if the squid is small, it can even be left whole).
- Prepare and fillet the red mullet, gut the anchovies and sardines, and clean the prawns, removing the heads. Heat the oil in a large skillet until hot. Dip the various types of fish in the semolina flour and fry them separately, making sure that the oil does not overheat.
- Remove the fish from the oil with a skimmer and dry on paper towels. season with a pinch of salt and serve.
