MIXED FRIED FISH

Preparation: 30 minutes

INGREDIENTS:

  • 1 lb. (450 g) squid
  • 9 oz. (250 g) red mullet
  • 7 oz. (200 g) prawns
  • 3 1/2 oz. (100 g) anchovies
  • 5 oz. (150 g) sardines
  • 2/3 cup (100 g) semolina flour
  • Oil for frying as needed
  • salt

 

INSTRUCTIONS:

  1. Clean the squid by removing the skin from the body and cutting the tentacles from the body.
  2. Flip back the tentacles and squeeze out and discard the beak located in the center of the tentacles. remove the eyes, the entrails, and the transparent inner cartilage.
  3. Cut the body of the squid into rings (if the squid is small, it can even be left whole).
  4. Prepare and fillet the red mullet, gut the anchovies and sardines, and clean the prawns, removing the heads. Heat the oil in a large skillet until hot. Dip the various types of fish in the semolina flour and fry them separately, making sure that the oil does not overheat.
  5. Remove the fish from the oil with a skimmer and dry on paper towels. season with a pinch of salt and serve.
