INGREDIENTS:
- Cooking spray
- 1 cup white whole-wheat flour
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 2 tablespoons matcha powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups plain unsweetened almond milk
- 1/4 cup safflower or vegetable oil
- 2 large eggs
- 2 tablespoons vegan butter, melted
- 2 teaspoons vanilla extract
INSTRUCTIONS:
- Preheat the oven to 350 degrees F, and spray a standard-size 12-well muffin pan with cooking spray.
- In a medium bowl, whisk together the white whole-wheat flour, all-purpose flour, sugar, matcha, baking powder, and salt. In a large bowl, whisk together the almond milk, oil, eggs, melted vegan butter, and vanilla. Pour the dry into the wet mixture, and stir just until combined (do not overmix).
- Evenly divide the batter among the wells in the greased muffin pan. Bake until only a few crumbs stick to a cake tester when poked into the center of a muffin, about 25 minutes. Let cool in the pan for 10 minutes, then gently transfer muffins to a cooling rack to finish cooling. Serve.
