INSTRUCTIONS:

  1. Cut the celery and carrots into 2-inch lengths and then into rough matchsticks.
  2. Place the cut vegetables in a bowl and mix them with salt. Set them aside for at least 10 minutes and up to an hour. This process helps to draw out excess moisture and enhance the flavors.
  3. In a separate bowl, whisk together the sugar, dark sesame oil, soy sauce, vinegar, minced garlic, and a pinch of cayenne if desired. This mixture will serve as the marinade.
  4. Rinse the celery and carrots under cold water to remove the excess salt, then drain and pat them dry.
  5. Toss the vegetables with the prepared marinade until they are evenly coated.
