If you want a change from traditional orange marmalade, this is the recipe to try. Here is another useful marmalade that can be made at any time of year using store-bought fruit. It has great color and flavor.
MAKES: about 3¼ cups
INGREDIENTS:
- juice and pared rind of 12 limes
- 3 cups warmed sugar
INSTRUCTIONS:
- Shred the rind pieces finely.
- Place the pith and seeds from the limes in a piece of muslin and tie it up with string. Put the lime rind, lime juice, and 7 cups of water into a preserving pan and bring to the boil, then simmer for 1
hour until the rind is soft. - Add the warmed sugar and stir over a low heat until all the sugar has dissolved, then turn up the heat and boil rapidly to reach setting point.
- Remove the muslin bag, then pour the marmalade into warm, sterilized jars and seal.
