Light and Fluffy Scrambled Eggs

INGREDIENTS:

  • 8 large eggs
  • ¾ teaspoon kosher salt
  • 3 tablespoons whole milk
  • 2 tablespoons unsalted butter

 

INSTRUCTION:

  1. In a medium bowl, combine the eggs, kosher salt, and whole milk. Whisk the mixture until it becomes homogeneous and frothy, which usually takes about 1 minute. Allow the egg mixture to rest at room temperature for at least 15 minutes. During this time, you’ll notice the eggs darkening in color significantly.
  2. In a 10-inch nonstick skillet, melt the unsalted butter over medium-high heat. Swirl the pan as the butter melts to ensure even coating. Rewhisk the rested eggs until they become foamy.
  3. Transfer the foamy egg mixture to the skillet with the melted butter. Cook the eggs over medium-high heat, slowly scraping the bottom and sides of the pan with a silicone spatula as the eggs begin to solidify.
  4. Continue cooking the eggs, constantly scraping and folding them, until they form solid, moist curds and there is no liquid egg remaining. This process usually takes about 2 minutes. Keep in mind that the eggs should still appear slightly underdone as they will continue cooking off the heat.
  5. Immediately transfer the light and fluffy scrambled eggs to a plate and serve.
