INSTRUCTIONS:

Allow the egg mixture to rest at room temperature for at least 15 minutes. During this time, you’ll notice the eggs darkening in color significantly.
  2. Add the chilled and cubed unsalted butter to the rested eggs. Transfer the egg and butter mixture to a 10-inch nonstick skillet and place it over medium-low heat.
  3. Cook the eggs while stirring constantly until the butter completely melts and the eggs start to set. As the eggs become firmer, increase the stirring speed to break up the large curds and ensure even cooking.
