lemon & orange nectar

This classic fresh citrus nectar is so versatile that you can drink it any time. It makes a drink like the best old-fashioned lemonade mixed with orangeade.

MAKES: about 2 quarts

 

INGREDIENTS:

  • 8–10 lemons
  • 6–8 oranges
  • 3 scant cups sugar
  • ½ tsp citric acid

 

INSTRUCTIONS:

  1. Pare the zest finely from 1 lemon and 1 orange.
  2. Put the sugar, zest and 2½ cups water into a pan. Heat gently to make a syrup, then boil for 5 minutes.
  3. Strain through a sieve into a measuring pitcher; discard the zest. Squeeze enough lemons and oranges to produce the same amount of juice as syrup, keeping the same proportions of half lemon, half orange.
  4. Mix the syrup and fruit juices together in the pan and add the citric acid, stirring until it has dissolved.
  5. Pour the nectar into clean, clip-top or corked bottles and sterilize, or pour into freezer containers, seal, and freeze
