INGREDIENTS:

For the dressing

  • ¼ cup ground pine nuts
  • 1 tablespoon lemon juice
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon salt
  • Dash of white pepper

For the prawn salad

  • 1 lemon wedge
  • 6 jumbo shrimp or king prawns, cleaned and deveined, but with shell left on
  • 1 kirby cucumber or pickling cucumber, julienned
  • 1 teaspoon sea salt
  • 2 teaspoons mirin
  • 3½ ounces bamboo shoots, soaked and sliced
  • ¼ Korean pear, julienned

 

PREPARATIONS:

TO MAKE THE DRESSING

  1. In a small bowl, whisk together the pine nuts, lemon juice, sesame oil, salt, and pepper. Set aside.

TO MAKE THE PRAWN SALAD

  1. Squeeze the lemon over the prawns and then put them in a steamer basket over boiling water, cover, and steam for 6 to 8 minutes. Let cool.
  2. While the prawns are steaming, sprinkle the cucumber with sea salt and let stand for 5 minutes. Then squeeze gently between your hands to remove excess liquid.
  3. Shell and halve the prawns lengthwise.
  4. In a medium bowl, mix the mirin, cucumber, sea salt, bamboo shoots, and pear with half of the dressing.
  5. Mound the vegetable mixture on a serving platter, top with the prawns, and drizzle the remaining dressing over the top.

 

YIELD:

  • Serves 3 as a side dish
