INGREDIENTS:

For the Poppers:

  • ½ pound jalapeño peppers
  • ¼ cup cornstarch
  • 1 egg
  • 1 tablespoon lime juice
  • ¼ cup plain breadcrumbs
  • ¼ cup panko breadcrumbs
  • ½ teaspoon salt
  • Oil for misting or cooking spray

 

For the Filling:

  • 4 ounces cream cheese
  • 1 teaspoon grated lime zest
  • ¼ teaspoon chile powder
  • ⅛ teaspoon garlic powder
  • ¼ teaspoon salt

 

INSTRUCTIONS:

  1. Prepare the Filling: In a small bowl, combine the cream cheese, grated lime zest, chile powder, garlic powder, and salt. Mix the ingredients well and refrigerate the mixture while you prepare the peppers.
  2. Prep the Peppers: Cut the jalapeño peppers into slices that are about ½ inch wide lengthwise. Use a small, sharp knife to carefully remove the seeds and veins from each slice.a. For milder poppers, discard the seeds and veins. b. For spicier poppers, finely chop the seeds and veins. Gradually mix a small amount into the filling, tasting as you go, until you achieve your desired level of heat.
  3. Stuff the Peppers: Fill each jalapeño slice with the prepared cream cheese mixture. The creamy and zesty filling will balance the heat of the peppers.
  4. Prepare Breading Stations: Place cornstarch in a shallow dish. In another dish, beat the egg and lime juice together. In a third dish, combine the plain breadcrumbs, panko breadcrumbs, and salt.
  5. Coat the Poppers: Dip each stuffed jalapeño slice in the cornstarch, shaking off any excess. Then, dip it in the egg mixture, ensuring it’s well-coated. Roll the coated slice in the breadcrumb mixture, pressing gently to ensure an even coating.
