  • 1/2 teaspoon ground cumin
  • Pinch cayenne pepper
  • 3 tablespoons (45 ml) dry white wine
  • 1 cup (235 ml) vegetable broth
  • 1 tablespoon (15 ml) tamari
  • 1/2 teaspoon liquid smoke, or to taste
  • Salt and pepper to taste

 

INSTRUCTIONS:

  1. Heat the neutral-flavored oil in a large skillet over medium heat. Add the minced onion, carrot, and celery. Cook while occasionally stirring with a whisk until the onion becomes fragrant (about 3 to 4 minutes).
  2. Incorporate the minced garlic, cremini mushrooms, and cooked bulgur into the skillet. Cook for an additional 2 minutes.
  3. Add the all-purpose flour, teff flour, ground cumin, and a pinch of cayenne pepper. Continue to cook and whisk for 3 to 5 minutes, allowing the flour to cook thoroughly. The mixture will become clumpy and pasty.
