Yield: 4 servings

Prep Time: 15 minutes

Cooking Time: 5–7 minutes

Total Time: 20–22 minutes

INGREDIENTS:

For the Dressing:

  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill weed, crushed
  • 1 teaspoon ground oregano
  • ½ teaspoon salt

For the Meatballs:

  • ½ pound ground lamb
  • 1 tablespoon diced onion
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill weed, crushed
  • ¼ teaspoon oregano
  • ¼ teaspoon coriander
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt

For Assembling:

  • 4 pita halves

Suggested Toppings:

  • Red onion, slivered
  • Seedless cucumber, thinly sliced
  • Crumbled Feta cheese
  • Sliced black olives
  • Chopped fresh peppers

INSTRUCTIONS:

  1. Begin by stirring together the ingredients for the dressing. Combine the plain yogurt, lemon juice, crushed dried dill weed, ground oregano, and salt in a bowl. Refrigerate the dressing while you prepare the lamb.
  2. In a large bowl, mix all the meatball ingredients together to ensure even distribution of the seasonings.
  3. Shape the meat mixture into 12 small meatballs. You can choose to keep them rounded or slightly flatten them, depending on your preference.
  4. Place the meatballs in the air fryer and cook at 390°F for 5 to 7 minutes until they are well done. Once cooked, remove them from the air fryer and allow them to drain on paper towels.
  5. To assemble the Greek Pita Pockets, open the pita halves to form pockets. Fill each pocket with a generous serving of the cooked meatballs and your selection of toppings.
  6. Drizzle the yogurt dressing over the meatballs and toppings, enhancing each bite with its zesty and tangy flavors.

TIP:

  • If you notice excessive smoking due to the high fat content in the ground lamb, pause the air fryer and introduce several tablespoons of water to the air fryer drawer. This will help control the smoke and ensure a smooth cooking process.

Savor the delightful fusion of flavors as you sink your teeth into a Greek Pita Pocket. A harmony of succulent lamb meatballs, vibrant vegetables, crumbled Feta cheese, and zesty yogurt dressing awaits within the warm embrace of a pita. Whether you relish the traditional sandwich or embrace a gluten-free salad variation, these pockets promise a taste of the Mediterranean that’s both satisfying and convenient. Immerse yourself in the essence of Greece with each mouthwatering bite, and relish the delightful balance of textures and tastes that define this wholesome and flavorful meal.
