Grandma Pizza

Welcome to a taste of nostalgia with Grandma’s home-style Sicilian pizza! Unlike the other pizzas featured in this chapter, Grandma’s pizza skips the parbaking step and embraces simplicity in its preparation. With a thinner, crispier crust and a light scattering of toppings, this pizza offers a deliciously rustic experience that will transport you to a time when grandmas lovingly prepared meals in their cozy kitchens.

Hailing from Long Island and popularized by pizzerias like Prince Umberto’s and Gigante’s, this Sicilian pizza variation has earned its place on the menu under the affectionate name “Grandma.” The traditional toppings consist of mozzarella, crushed tomatoes, and hints of garlic and oregano. While fresh mozzarella or Homemade Mozzarella are excellent options, using shredded whole-milk mozzarella is equally delightful.

In this recipe, we provide directions for making a 28-ounce Sicilian dough ball, but if you want a little extra treat, consider making a standard 35-ounce ball and trim off 7 ounces to craft some delightful Garlic Knots or Bacon Twists. Embrace the spirit of Grandma’s kitchen, where no delicious opportunity goes to waste!

Now, let’s embark on a culinary journey that connects you to the warmth of an Italian grandma’s embrace. Gather your ingredients, roll up your sleeves, and get ready to savor a slice of tradition with every bite of Grandma’s Sicilian pizza.

INGREDIENTS:

  • 1 (28-ounce/795-gram) ball Sicilian Dough without Starter
  • ¼ cup (60 grams) olive oil
  • 1¼ cups (285 grams) hand-crushed tomatoes or Early Girl Tomato Sauce
  • 1 teaspoon (3 grams) finely chopped garlic
  • Dried oregano, for seasoning and sprinkling
  • Fine sea salt and freshly ground black pepper
  • 8 ounces (225 grams) fresh whole-milk mozzarella cheese or store-bought fior di latte (or 10 ounces/285 grams shredded whole-milk mozzarella cheese)
  • Extra virgin olive oil, for drizzling
  • Grated Pecorino Romano cheese, for dusting
  • Garlic Oil, for drizzling

PREPARATIONS:

  1. Remove the Sicilian dough ball from the refrigerator and let it warm to 60°F to 65°F.
  2. Preheat the oven with two pizza stones or baking steels to 500°F for 1 hour.
  3. Pour the olive oil into a 12 by 18-inch well-seasoned steel Sicilian pan.
  4. Transfer the dough to the prepared pan and coat both sides with oil.
  5. Press the dough outward in all directions to create an even layer, then let it rest for 30 minutes.
  6. Push the dough outward a second time, achieving an even thickness and reaching the corners.
  7. Let the dough rest again for about 1 hour until it has risen but not quite doubled.

SPECIAL INSTRUCTIONS:

  • This recipe does not require parbaking the dough before topping.
  • Be gentle while stretching the dough to avoid tearing.
  • Avoid touching or pressing the dough after the second pushing stage.

TIPS:

  • Use Homemade Mozzarella or fresh mozzarella (fior di latte) to reduce moisture during baking.
  • If using shredded mozzarella, spread it evenly on the dough, leaving a border.
  • Rotate the pan during baking for even cooking.
  • Drizzle olive oil down the pan’s side if the pizza sticks to any area.
  • Finish the pizza with a dusting of Pecorino, oregano, and a drizzle of garlic oil.

YIELD:

  • Makes one 12 by 18-inch pizza or 12 squares.
