INGREDIENTS:

  • 1 cup gluten-free self-raising flour
  • ½ cup rice flour
  • 1 cup brown sugar
  • ½ cup cocoa powder
  • 1 cup dark chocolate bits
  • ½ cup walnuts (optional)
  • 1 tsp vanilla essence
  • 2 eggs
  • 2 tbsp water
  • 100g Copha, melted
  • Icing sugar or drinking chocolate to dust

PREPARATIONS:

  • Preheat oven to 170˚C.
  • Grease and line a 30 x 15cm slab tin.

METHOD:

  1. In a large bowl, combine the gluten-free self-raising flour, rice flour, brown sugar, cocoa powder, dark chocolate bits, and walnuts (if using). Mix thoroughly and create a well in the center.
  2. Whisk together the vanilla essence, eggs, and water in a separate bowl. Pour the mixture into the well created in the dry ingredients.
  3. Add the melted Copha to the bowl and gently mix all the ingredients until just combined. Avoid overmixing, as this can affect the texture of the brownies.
  4. Spoon the brownie mixture into the greased and lined baking pan, then smooth the surface to create an even layer.
  5. Bake the brownies in the preheated oven at 170˚C for approximately 30 minutes. The center should still be slightly moist when tested.
  6. Once baked, remove the brownies from the oven and allow them to cool on a wire rack.

ASSEMBLY:

  • Once the brownies have completely cooled, cut them into squares using a sharp knife.
  • Dust the brownie squares with icing sugar or drinking chocolate to add a finishing touch.

TIPS:

  • Experiment with different types of nuts, such as roasted hazelnuts, to customize the flavor and texture.
  • To ensure gluten-free integrity, use certified gluten-free ingredients.
  • For an extra decadent touch, serve warm brownies with a scoop of vanilla ice cream.
