Cashew flour and milk lend these rich brownies a moist, almost fudgy texture. Dark or semisweet chocolate (rather than milk or white) should be dairy-free; however, check the label to be sure. Don’t forget to sift the nut flour or meal well to remove any lumps. And for a neat presentation, it’s important to chill the brownies until very cold before slicing. Serve with fresh berries and Whipped Coconut Cream.
MAKES: 8 medium or 16 small brownies (about 8 servings)
INGREDIENTS:
- Nonstick cooking spray
- 1 cup cashew or almond flour or meal, well sifted
- 1/4 cup unsweetened cocoa powder
- 3/4 cup plus 2 tablespoons coconut sugar or brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 stick (8 tablespoons) vegan butter, melted
- 2 ounces (dairy-free) semisweet or dark chocolate (such as 60% cacao) in bar form, melted
- 2 large eggs, lightly beaten
- 1/4 cup plain unsweetened cashew milk
- 2 tablespoons safflower oil
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- Preheat the oven to 350 degrees F, and grease an 8 x 8-inch baking dish with cooking spray.
- In a medium bowl, whisk together the cashew flour, cocoa powder, coconut sugar, granulated sugar, baking powder, baking soda, and salt.
- In a large bowl, stir together the melted vegan butter and melted chocolate. Allow to cool slightly until warm, not hot. Whisk in the eggs, cashew milk, oil, and vanilla. Pour the dry mixture into this wet mixture, and stir just until combined (do not overmix).
- Pour the batter into the greased baking dish. Bake on the center rack until a tester poked into the center comes out with just a few moist crumbs, about 25 minutes. (The sides of the brownies will pull away from the perimeter of the pan and the center will sink slightly—this is normal.) Let cool to room temperature, at least 30 minutes.
- Cover and chill until very cold, at least 2 hours. Cut into squares. (If you try to cut into
the brownies before they’re cold, they won’t form neat squares or rectangles.)
