Fried Peaches

Each peach slice is coated in a combination of sliced almonds, brown sugar, almond extract, and crispy rice cereal, providing a delightful crunch that encapsulates warm, cooked peaches within. INGREDIENTS:

  • 2 egg whites
  • 1 tablespoon water
  • ¼ cup sliced almonds
  • 2 tablespoons brown sugar
  • ½ teaspoon almond extract
  • 1 cup crisp rice cereal
  • 2 medium, very firm peaches, peeled and pitted
  • ¼ cup cornstarch
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

Prepare the Fried Peaches:

  1. Preheat your air fryer to 390°F (200°C).
  2. In a shallow dish, beat together the egg whites and water.
  3. In a food processor, combine the sliced almonds, brown sugar, and almond extract. Pulse until the ingredients are well combined and the almonds are finely chopped.
  4. Add the crisp rice cereal to the food processor and pulse briefly to crush the cereal. Transfer the crumb mixture to a shallow dish or a plate.
  5. Cut each peeled and pitted peach into eighths. Place the peach slices in a plastic bag or container with a lid. Add the cornstarch, seal the bag or container, and shake to coat the peach slices evenly.
  6. Remove the peach slices from the bag or container, tapping them to shake off excess cornstarch. Dip each peach slice into the egg wash and then roll it in the crumb mixture, ensuring it’s well coated. Spray the coated peach slices with oil or cooking spray.
  7. Arrange the coated peach slices in a single layer in the air fryer basket.
  8. Air fry the peach slices for 5 minutes. Shake the basket to separate any slices that have stuck together. If there are any spots that aren’t browning, lightly spritz them with oil.
  9. Continue air frying for 1 to 3 minutes longer, until the peach slices are golden brown and crispy.
