  3. Cook the Pasta: Add the pound of fresh tagliatelle or pappardelle to the boiling water and cook it until it reaches the desired texture, which is typically al dente. This should take around 1½ minutes, but it’s always best to follow the package instructions for your specific pasta.
  4. Reserve Cooking Water: Before draining the pasta, remember to reserve about 1 cup of the cooking water. This starchy water will come in handy later to help create a smooth and cohesive sauce.
  5. Combine Pasta and Bolognese Sauce: Once the pasta is cooked, add it directly into the saucepan with the Bolognese sauce. Pour in ½ cup of the reserved cooking water to help bind the pasta and sauce together. Turn up the heat to high and stir the mixture until the pasta is fully coated in the rich sauce.
