Fish Tacos, Four Ways

Fish Tacos are a versatile and delicious dish that can be customized in various ways to suit your taste. With this recipe, you can choose between four different cooking methods: microwave, grilled, broiled, or fried. These tacos are quick and easy to make, perfect for a satisfying meal in just 20 minutes. Get creative with your toppings and enjoy the flavors of fresh fish and vibrant ingredients.

MAKES: 4 servings

TIME: 20 minutes

INGREDIENTS:

  • 1 large onion, roughly chopped
  • 2 jalapeño chiles, roughly chopped
  • About 1.5 pounds thick white fish fillets (such as cod, red snapper, sea bass, grouper, or halibut)
  • Salt and freshly ground black pepper
  • Twelve to sixteen 6-inch corn tortillas
  • Fresh salsa
  • Hot sauce or Chile Paste (optional)
  • Sour cream or crumbled queso fresco or other grated cheese (optional)
  • Shredded cabbage, chopped tomato and cucumber, and cilantro sprigs (optional)
  • Lime wedges

INSTRUCTIONS:

  1. In a large skillet with a tight-fitting lid or a microwavable casserole, combine the chopped onion, jalapeños, and fish. Sprinkle with salt and pepper. If using the microwave, add 1 tablespoon of water. Cover the skillet or casserole.
  2. Cook the fish over medium heat on the stovetop or in the microwave for approximately 6 minutes (3 minutes in the microwave) until the fish is cooked through.
  3. While the fish cooks, heat the corn tortillas. You can toast them individually in a skillet over medium heat, flipping once or twice until hot (about a minute), or heat them in the microwave. If using the microwave, wrap half a dozen tortillas at a time in a slightly damp towel and heat for about a minute.
  4. To serve, place a small portion of fish, along with some onions and jalapeños, onto a warm tortilla. Top with fresh salsa and, if desired, add hot sauce, sour cream, and/or vegetables. Squeeze lime juice over the taco. Repeat with the remaining tortillas.

VARIATIONS:

GRILLED FISH TACOS:

  • Omit the onion and jalapeños or chop them as additional garnish.
  • Brush the fish with extra virgin olive oil and season with salt, pepper, and optional chili powder. Let it rest.
  • Follow the instructions for Grilled Fish Fillets or Steaks.

BROILED FISH TACOS:

  • Prepare the fish as described in the previous variation.
  • Follow the instructions for Broiled Thick Fillets or Steaks.

FRIED FISH TACOS:

  • Choose your preferred frying method: deep-fried, shallow-fried, or oven-fried.
  • Prepare the fish as described in the previous variation.
  • Follow the instructions for Deep-Fried Seafood, Pan-Cooked Thick Fish Fillets, or Oven-“Fried” Fish Fillets.
