INGREDIENTS:
Sausage Roll:
- 750 g beef mince
- 1 cup (90 g) soft fresh breadcrumbs
- 1 egg, lightly whisked, plus 1 extra
- 1 carrot, finely grated
- 1 clove garlic, crushed
- ⅓ cup (35 g) Perfect Italiano™ Parmesan Grated
- 2 sheets frozen puff pastry, thawed
- ¼ cup Perfect Basil Pesto (see recipe below)
- 2½ cups (225 g) Perfect Italiano™ Mozzarella
Perfect Basil Pesto:
- ⅓ cup pine nuts, toasted
- 3 cups basil leaves
- 1 garlic clove, roughly chopped
- ⅔ cup (70 g) Perfect Italiano™ Parmesan Grated
- ⅔ cup (165 ml) olive oil
INSTRUCTIONS:
Sausage Roll:
- Preheat your oven to 220°C / 200°C fan-forced. Grease and line a large oven tray with baking paper.
- In a bowl, combine the beef mince, breadcrumbs, egg, grated carrot, crushed garlic, and 2 tbsp. of Parmesan. Mix thoroughly.
- Place the puff pastry sheets side by side on a clean work surface. Join the edges together by lightly pressing with your fingertips or a rolling pin, forming a single large pastry sheet.
- Spoon the mince mixture along the center of the pastry, flattening it to cover the pastry while leaving a 2 cm border. Spread the Perfect Basil Pesto evenly over the mince.
- Create a mound of Mozzarella on top of the mince, piling it along the center. Roll the mince tightly to form a log, using the pastry as a guide. Place the rolled log, seam-side down, onto the prepared tray.
- Score the top of the pastry every 4 cm. Brush the pastry with the extra whisked egg and sprinkle the remaining 2 tbsp. of Parmesan over the top.
- Bake for 55 minutes, or until the sausage roll is golden brown and puffed. Once out of the oven, allow it to stand for 5 minutes before cutting and serving.

- In a small food processor, combine the toasted pine nuts, basil leaves, roughly chopped garlic clove, Perfect Italiano™ Parmesan Grated, and olive oil. Blend until finely chopped.
TIPS:
- If making the Perfect Basil Pesto from scratch, allow an additional 10 minutes. This recipe yields approximately one cup of pesto.
- Store pesto in a sterilized jar in the fridge for 2-3 days. To prevent oxidation and browning, make sure to add an extra 1-2 cm of olive oil to cover the surface.
