This comes from Dona Crawford, who says she first tried it on a retreat in Sun Valley, Idaho.
YIELD: 3 servings, each with 1 gram of carbohydrates, a trace of fiber, and 31 grams of protein.
INGREDIENTS:
- 1 pound cod fillets
- 2 1/2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon minced onion
- 1 ounce grated Parmesan cheese
INSTRUCTIONS:
- Preheat the oven to 350°F, and spray a shallow baking dish with nonstick cooking spray. Place the fish in the prepared baking dish.
- In a small bowl, combine the mayonnaise, mustard, Worcestershire, and onion, and spread evenly over fillets.
- Sprinkle the filets with the Parmesan, and bake uncovered for 30 minutes, or until . Crispy.
NOTE:
- This combination of seasonings tastes great on chicken, too.
