INGREDIENTS:

For the Marinade:

  • 1 cup buttermilk
  • ½ teaspoon black pepper
  • ½ teaspoon salt

 

For the Coating:

  • 1 cup flour
  • 1 cup panko breadcrumbs
  • 2 teaspoons salt
  • 2 tablespoons poultry seasoning

 

For the Chicken:

  • 2 pounds chicken wings
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

  1. Prepare the Chicken: Start by cutting off the tips of the chicken wings and discarding them or saving them for making stock. Separate the remaining wing sections at the joint, creating 2 pieces per wing. Place the wings in a large bowl or plastic bag.
  2. Create the Marinade: Mix the buttermilk, black pepper, and salt together to create the marinade. Pour the marinade over the wings, ensuring they are well coated. Refrigerate the wings for at least 1 hour, but not more than 8 hours, to allow the flavors to develop.
  3. Preheat the Air Fryer: Preheat the air fryer to 360°F (180°C).
  4. Prepare the Coating: Mix the flour, panko breadcrumbs, salt, and poultry seasoning together in a shallow dish or on a sheet of wax paper.
  5. Coat the Wings: Remove the wings from the marinade, allowing any excess to drip off, and roll them in the coating mixture to create a flavorful crust.
  6. Mist with Oil: Spray both sides of each coated wing with oil or use a cooking spray.
  7. Cooking Process: Place the coated wings in the air fryer basket, ensuring they are in a single layer and not overcrowded. Cook the wings for 17 to 19 minutes, or until the chicken is cooked through and the juices run clear.
  8. Repeat for Remaining Batches: Repeat the cooking process for the remaining wings, ensuring each batch is cooked to perfection.
