INGREDIENTS:

  • 1¼ cups sliced kosher hotdogs (3 or 4, depending on size)
  • ½ cup flour
  • ½ cup yellow cornmeal
  • 2 teaspoons baking powder
  • ½ cup skim milk
  • 1 egg
  • 2 tablespoons canola oil
  • 8 foil muffin cups, paper liners removed
  • Cooking spray
  • Mustard or your favorite dipping sauce

 

INSTRUCTIONS:

  1. Prepare the Hotdogs: Begin by slicing each kosher hotdog in half lengthwise, and then cut each half into ¼-inch half-moon slices. Set aside these delightful hotdog pieces.
  2. Preheat the Air Fryer: Preheat the air fryer to 390°F (200°C).
  3. Mix Dry Ingredients: In a large bowl, stir together the flour, yellow cornmeal, and baking powder. This dry mixture forms the base of your delicious muffins.
  4. Combine Wet Ingredients: In a separate small bowl, beat together the skim milk, egg, and canola oil until they’re just blended.
  5. Combine Wet and Dry Mixtures: Pour the egg mixture into the bowl containing the dry ingredients. Stir with a spoon to mix everything well, ensuring there are no lumps.
  6. Add Hotdog Slices: Gently stir in the sliced hot dogs, allowing them to become evenly distributed throughout the batter.
  7. Prepare Muffin Cups: Lightly spray the foil muffin cups with cooking spray. This ensures the muffins won’t stick to the cups during cooking.
  8. Fill the Muffin Cups: Divide the batter evenly among the prepared muffin cups.
  9. Air Fryer Cooking – First Batch: Place 4 muffin cups in the air fryer basket. Cook at 390°F for 5 minutes.
  10. Adjust Cooking Temperature: Reduce the air fryer temperature to 360°F (180°C). Continue cooking for an additional 3 to 5 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. Repeat for Remaining Batches: Repeat steps 9 and 10 to bake the remaining corn dog muffins, ensuring each batch is cooked to perfection.
