Ingredients:

  • 2 cups grated zucchini

  3. In a large mixing bowl, whisk together the vegetable oil, Greek yogurt, granulated sugar, eggs, and vanilla extract until smooth.
  4. In a separate mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the grated zucchini and semi-sweet chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
