INGREDIENTS:

  • ½ cup flour
  • ½ teaspoon salt
  • 1 teaspoon marjoram
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon thyme
  • 1 egg
  • 1 teaspoon lemon juice
  • 1 teaspoon water
  • 1 cup breadcrumbs
  • 4 chicken tenders, pounded thin
  • Oil for misting or cooking spray
  • 4 whole-grain hotdog buns
  • 4 slices Gouda cheese
  • 1 small Granny Smith apple, thinly sliced
  • ½ cup shredded Napa cabbage
  • Coleslaw dressing

 

INSTRUCTIONS:

  1. Begin by mixing together the flour, salt, marjoram, dried parsley flakes, and thyme in a shallow dish.
  2. In another shallow dish, beat together the egg, lemon juice, and water to create the egg wash.
  3. Place the breadcrumbs in a third shallow dish.
  4. Carefully cut each flattened chicken tender in half lengthwise.
  5. Dip the flattened chicken strips in the flour mixture, followed by the egg wash. Allow excess egg to drip off, then roll the strips in the breadcrumbs. Be sure to coat both sides evenly. Spray both sides of the coated strips with oil or cooking spray.
  6. Cook the coated chicken strips in the air fryer at 390°F for 5 minutes. Afterward, spray them with oil, flip them over, and spray the other side.
  7. Continue cooking for an additional 3 to 5 minutes, or until the chicken strips are well done and have achieved a crispy brown exterior.
  8. Assemble your Chicken Schnitzel Dogs: Place two schnitzel strips on the bottom of each whole-grain hotdog bun. Top them with slices of Gouda cheese, thinly sliced Granny Smith apple, and shredded Napa cabbage. Drizzle the coleslaw dressing over the top, then complete the assembly with the other half of the bun.
