INGREDIRENTS:

  • 1 tablespoon butter
  • 4 chicken tenders, cut in half crosswise
  • Salt and pepper, to taste
  • ¼ cup flour
  • Oil for misting
  • 4 slices ham, ¼- to ⅜-inches thick, large enough to cover an English muffin
  • 2 English muffins, split

 

Sauce:

  • 2 tablespoons butter
  • ½ cup chopped green onions
  • ½ cup chopped mushrooms
  • 2 tablespoons flour
  • 1 cup chicken broth
  • ¼ teaspoon garlic powder
  • 1½ teaspoons Worcestershire sauce

 

INSTRUCTIONS:

  1. Begin by placing 1 tablespoon of butter in the air fryer baking pan. Cook at 390°F for 2 minutes to melt the butter.
  2. Sprinkle the chicken tenders with salt and pepper to taste. Roll them in the ¼ cup of flour, ensuring they are evenly coated.
  3. Place the coated chicken tenders in the baking pan, turning them to coat with the melted butter.
  4. Cook the chicken at 390°F for 5 minutes. Flip the chicken pieces over and lightly spray the tops with oil. Continue cooking for 5 more minutes or until the chicken juices run clear. Note that the chicken will not brown during this process.
  5. While the chicken is cooking, prepare the sauce: In a medium saucepan, melt the 2 tablespoons of butter.
  6. Add the chopped green onions and mushrooms to the saucepan. Sauté them until they become tender, which should take about 3 minutes.
  7. Stir in the flour and gradually add the chicken broth. Continuously stir until the mixture becomes a smooth gravy.
  8. Introduce garlic powder and Worcestershire sauce to the sauce. Allow it to simmer on low heat until the sauce achieves a thickened consistency, approximately 5 minutes.
  9. Once the chicken is cooked, remove the baking pan from the air fryer and set it aside.
  10. Place the ham slices directly into the air fryer basket and cook at 390°F for 5 minutes or until they become hot and start to sizzle slightly. Set the ham slices aside on top of the cooked chicken for now.
  11. Put the split English muffin halves in the air fryer basket and cook at 390°F for 1 minute.
  12. Open the air fryer and place a slice of ham on top of each English muffin half. Stack 2 pieces of cooked chicken on top of each ham slice. Cook at 390°F for 1 to 2 minutes to heat the stack through.
  13. Assemble each English muffin stack on a serving plate and generously pour the prepared sauce over the top.
