Chicken & Prawn Pad Thai

INGREDIENTS:

  • 375g pad Thai rice noodles
  • 2 tbs vegetable oil
  • 16 green prawns, peeled, deveined
  • 500g chicken thigh fillets, diced
  • 2 eggs, whisked
  • 5 green onions, thinly sliced diagonally
  • 225g Passage to Asia Pad Thai stir-fry sauce
  • 1 cup bean sprouts, trimmed
  • Small red chillies, thinly sliced, to serve
  • Thai basil, to serve

 

INSTRUCTIONS:

  1. Begin by cooking the pad Thai rice noodles according to the instructions on the packet. Once cooked, drain and set them aside.
  2. Heat 1 tablespoon of vegetable oil in a hot wok. Add the peeled and deveined green prawns and cook for about 3 minutes, or until they are just cooked. Transfer the prawns to a bowl and set them aside. Next, add the diced chicken thigh fillets to the wok and cook for approximately 5 minutes, or until they are browned and cooked through. Transfer the cooked chicken to the bowl with the prawns.
  3. In the same wok, heat the remaining tablespoon of oil. Pour in the whisked eggs and cook for about 1 minute, or until the eggs are just set. Add the thinly sliced green onions and stir until they are combined with the cooked eggs.
  4. Return the cooked chicken, prawns, and rice noodles to the wok. Pour in the Passage to Asia Pad Thai stir-fry sauce and toss the ingredients together until they are well combined and heated through.
  5. Remove the wok from the heat and stir in the trimmed bean sprouts, adding a refreshing crunch to the dish.
  6. To serve, spoon the Chicken & Prawn Pad Thai into individual serving bowls. Top each portion with thinly sliced small red chillies for a touch of heat and Thai basil for a fragrant and aromatic finish.
