INGREDIENTS:

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup flour
  • 2 eggs, beaten
  • ½ cup panko breadcrumbs
  • 3 tablespoons plain breadcrumbs
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

  1. In the bowl of a food processor, combine the chicken chunks, ½ teaspoon salt, black pepper, garlic powder, and onion powder. Process the mixture in short pulses until the chicken is finely chopped and well blended.
  2. Prepare three shallow dishes: Place flour in one, beaten eggs in another, and in a third dish (or plastic bag), combine the panko breadcrumbs, plain breadcrumbs, and ¼ teaspoon salt.
  3. Shape the chicken mixture into small nuggets.
  4. Dip each nugget in the flour, ensuring it’s coated. Then dip it in the beaten eggs, followed by the panko breadcrumb mixture.
  5. Spray both sides of the coated nuggets with oil or cooking spray. Arrange the nuggets in the air fryer basket in a single layer, close but not overlapping.
  6. Set the air fryer temperature to 360°F and cook the nuggets for 10 minutes. Midway through cooking, spray the nuggets with oil again and cook for an additional 3 to 4 minutes, until the chicken is thoroughly cooked and the coating turns golden brown.
  7. Repeat step 6 as needed to cook the remaining batches of nuggets.
