Try this recipe with different fruit, such as strawberries, peaches, mangoes, or pineapples. You can find coconut cream (not full-fat coconut milk or the sweetened coconut cream product meant for cocktails) at Trader Joe’s, Whole Foods, and natural food stores.

INGREDIENTS:
- 4 cups pitted fresh sweet cherries
- 1/4 cup strained fresh orange juice
- 3 tablespoons agave nectar, divided
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1 cup canned coconut cream (from a well-shaken can)
INSTRUCTIONS:
- In a medium bowl, stir together the cherries, orange juice, 2 tablespoons of the agave nectar, the vanilla, and the salt. Let sit for at least 15 minutes at room temperature. In a small bowl, stir together the remaining agave nectar plus the coconut cream.
- Ladle the cherries and their juices into 4 small bowls, and top with the coconut cream.
