Cheesy Sweet Potato, Potato & Sage Gratin

INGREDIENTS:

  • 2 tsp. butter
  • 3 cloves garlic
  • 2 tbsp. fresh sage
  • 1.2 kg Sebago potatoes, peeled and cut into 5 mm thick slices
  • 900 g sweet potato, peeled and cut into 5 mm thick slices
  • Salt and black pepper, to taste
  • 300 ml cream
  • 2 ¼ cups (200 g) Perfect Italiano™ Perfect Bakes cheese

 

INSTRUCTIONS:

  1. Preheat your oven to 200°C (180°C fan-forced).
  2. Grease an 8-cup (2 litre) capacity baking dish with the butter, ensuring an even coating.
  3. Finely chop the garlic and sage together, creating a fragrant mixture that will infuse the gratin with aromatic goodness.
  4. Begin by arranging a layer of Sebago potato slices onto the base of the prepared baking dish, slightly overlapping them. Season this layer with salt and black pepper. Sprinkle a portion of the chopped garlic and sage over the potatoes, and then drizzle a bit of cream. For added richness, add 2 tablespoons of Perfect Italiano™ Perfect Bakes cheese over the potatoes.
  5. Proceed to create the next layer using the sweet potato slices. Repeat the layering process: sweet potatoes, garlic-sage mixture, cream, and cheese. Continue alternating layers of white potatoes and sweet potatoes until all of the sliced vegetables have been used.
  6. To create a glorious finish, top the final layer with the remaining Perfect Italiano™ Perfect Bakes cheese. Sprinkle a touch of salt and black pepper over the cheese to enhance the seasoning.
  7. Slide the baking dish into the preheated oven and let it bake for 55-60 minutes, or until the potatoes turn tender and the top achieves a golden, crispy perfection. Once the gratin is cooked, allow it to stand for 5-10 minutes before serving, allowing the flavors to meld and the layers to settle.
