Caramelized Spiced Nuts

INGREDIENTS:

  • 2 tablespoons peanut or neutral oil, such as grapeseed or corn
  • 2 cups sugar
  • 2 teaspoons garam masala
  • 1/2 teaspoon cayenne
  • 1 teaspoon salt
  • 2 cups (about 1 pound) mixed unsalted shelled nuts

 

INSTRUCTIONS:

  1. Preheat the oven to 450°F and grease a baking sheet with the oil.
  2. Place a wide pot or deep skillet over high heat. Add 2 cups of water and the sugar to the pot, bringing it to a boil.
  3. Stir in the garam masala, cayenne, salt, and nuts. Reduce the heat to medium and cook, stirring frequently, until the liquid reduces to a syrup-like consistency, which usually takes 5 to 10 minutes.
  4. Reduce the heat to low and use a slotted spoon to remove the nuts from the syrup, allowing any excess syrup to drain off. Spread the nuts evenly on the greased baking sheet. Make sure to turn off the burner.
  5. Roast the nuts in the preheated oven for 10 minutes, tossing them once or twice with a spatula for even cooking.
  6. Remove the nuts from the oven and let them cool. The sugar coating will harden as the nuts cool down. Be cautious as the sugar coating can be very hot initially.
  7. Serve the caramelized spiced nuts immediately or store them in an airtight container at room temperature for 2 to 3 days.

 

VARIATION:

FIERY CARAMALIZED NUTS:

  • Substitute 1 tablespoon or more of finely minced canned chipotle chile with the adobo sauce for the garam masala. Adjust the amount according to your desired level of spiciness.
