- ¼ cup flat-leaf parsley, finely chopped, plus extra leaves, to serve
- 1 egg, beaten
- Salt and pepper
- 120g baby spinach leaves
- ¼ cup flour, for dusting
- Oil, to shallow fry
- 4 poached eggs
- Smoked paprika, to serve
- 250g cherry tomato medley, halved
- Baby herbs, to serve
INSTRUCTIONS:
- In a large bowl, combine the leftover roast pumpkin, roast potato, and roast carrot. Mash them together to create a base for the fritters.
- Add the shredded roast turkey, grated cheddar, Dijon mustard, finely chopped parsley, beaten egg, salt, and pepper to the vegetable mixture. Mix well until all ingredients are combined.
- Place the baby spinach in a colander and pour boiling water over it to wilt. Squeeze out excess water, then mix the wilted spinach with the vegetable and turkey mixture.
