Basic Pepper Paste

INGREDIENTS:

  • 3 ounces (about 10 to 15 pieces) dried chilies, such as Guajillo, New Mexico, Anaheim, or ancho
  • 4 cups boiling water
  • 3/4 cup extra-virgin olive oil
  • Salt

 

PREPARATION:

  1. Put on rubber gloves if you have sensitive skin, to protect your fingers.
  2. Stem and seed the chilies by removing the stem and tearing open each pepper lengthwise. Discard the seeds.
  3. Rinse the peppers and cover them with boiling water in a heatproof bowl. Place a plate atop the peppers to submerge them. Allow them to sit for 30 to 60 minutes to rehydrate, then drain, reserving 1/4 cup of the water.
  4. In a blender or food processor, combine the peppers, olive oil, and salt. Blend for at least 3 minutes until completely smooth. If the mixture is too thick for the blender, add a bit of the reserved water to thin out the paste.
  5. Taste and adjust seasoning. If needed, pass the mixture through a fine-mesh sieve to remove remaining pepper skins.
  6. Cover tightly with oil, wrap, and refrigerate for up to 10 days. Alternatively, freeze for up to 3 months.

 

TIPS:

  • Wearing gloves when handling chilies can prevent skin irritation.
  • Adjust the paste’s consistency by adding reserved water gradually.
  • Experiment with different types of dried chilies to achieve varying levels of heat and flavor.
