Avocado-Lime Salad

When avocados are in season, there is no easier or more-nutritious salad than this.

YIELDS: 2 servings, each with 8 grams of carbohydrates and 3 grams of fiber, for a total of 5 grams of usable carbs and 2 grams of protein. This is also loaded with healthy, monounsaturated fats, and potassium.

 

INGREDIENTS:

  • 2 big lettuce leaves
  • 1 ripe, black avocado
  • 2 teaspoons lime juice
  • Salt

 

 

INSTRUCTIONS:

  1. Simply place a lettuce leaf on a salad plate, slice the avocado, and arrange the avocado slices attractively on the lettuce.
  2. Sprinkle a teaspoon of lime juice over each serving, and salt lightly.
