INGREDIENTS:

  • 1½ cups cooked jasmine or sushi rice
  • ¼ teaspoon salt
  • 2 teaspoons five-spice powder
  • 2 teaspoons diced shallots
  • 1 tablespoon tamari sauce
  • 1 egg, beaten
  • 1 teaspoon sesame oil
  • 2 teaspoons water
  • ⅓ cup plain breadcrumbs
  • ¾ cup panko breadcrumbs
  • 2 tablespoons sesame seeds

 

Orange Marmalade Dipping Sauce:

  • ½ cup all-natural orange marmalade
  • 1 tablespoon soy sauce

 

INSTRUCTIONS:

  1. Prepare Rice and Dipping Sauce: Make the sticky rice according to the package instructions. While the rice is cooking, prepare the dipping sauce by combining the all-natural orange marmalade and soy sauce. Set the sauce aside for serving.
  2. Flavor the Rice: Stir together the cooked jasmine or sushi rice, salt, five-spice powder, diced shallots, and tamari sauce. This mixture will create the flavorful core of your rice logs.
  3. Shape and Chill the Logs: Divide the rice mixture into 8 equal portions. With slightly damp hands, mold each portion into a log shape. Place the shaped rice logs in the freezer for 10 to 15 minutes to firm up.
  4. Prepare Egg Wash: In a shallow bowl, mix the beaten egg, sesame oil, and water to create an egg wash.
  5. Coat with Breadcrumbs: Place plain breadcrumbs on a sheet of wax paper. Roll each chilled rice log in the plain breadcrumbs, ensuring an even coating.
  6. Coat with Panko and Sesame Seeds: Mix the panko breadcrumbs with the sesame seeds and place this mixture on another sheet of wax paper. Dip the breadcrumb-coated rice logs in the egg wash, then roll them in the panko and sesame seed mixture, pressing gently to ensure the coating adheres.
  7. Air Fry the Rice Logs: Set the air fryer temperature to 390°F (200°C). Cook the coated rice logs for approximately 5 minutes, or until they turn golden brown and crispy.
  8. Serve with Dipping Sauce: Allow the rice logs to cool slightly before serving. Serve them alongside the prepared Orange Marmalade Dipping Sauce for a delightful burst of flavor.
