- ¼ cup caster sugar
- 4 granny smith apples, peeled, quartered, and sliced into 3
- 3 cups frozen mixed berries, thawed and drained
Crumble Topping:
- 1 ½ cups plain flour
- 1 cup oats
- ¾ cup light brown sugar
- ¼ teaspoon ground cinnamon
- ¼ teaspoon salt
- 150 g Western Star Chef’s Choice Cultured Unsalted Butter, cut into cubes
Orange Custard:
- 300 ml bottle Western Star Thickened Cream
- 1 orange, rind zested
- 2 egg yolks
- ¼ cup caster sugar
- 2 teaspoons cornflour
INSTRUCTIONS:
- In a medium (about 2-litre capacity) oven-proof frying pan, combine the butter and sugar. Cook over medium heat, stirring, until melted and combined.
- Add the apple slices and toss well to coat. Cover with the lid and simmer for 10 minutes, stirring occasionally.
- Toss in the mixed berries, ensuring they are well combined with the apple mixture.
- Preheat the oven to 200°C / 185°C fan-forced.
- In a large bowl, mix together the flour, oats, brown sugar, cinnamon, and salt.
- Add the cubed unsalted butter and use your fingertips to rub it into the dry ingredients until large clumps form.
- Scatter the crumble topping evenly over the apple-berry mixture in the frying pan.
- 8. Bake the crumble in the preheated oven for 30-35 minutes or until the top is golden brown, and the juice is bubbling.
- 9. While the crumble is baking, make the orange custard.
- Pour the thickened cream into a small saucepan over medium-low heat. Add most of the orange zest (reserve a small amount for garnishing) and stir to combine. Bring the cream to just before boiling point and turn off the heat.
- In a large heat-proof bowl, whisk together the egg yolks, caster sugar, and cornflour until pale and creamy.
- Gradually pour the hot cream mixture into the egg yolk mixture, whisking constantly, until well combined and smooth.
- Return the custard mixture to the saucepan and place over very low heat. Stir constantly for about 5 minutes or until the custard thickens and coats the back of a wooden spoon.
- 14. Serve the warm and fragrant Apple & Mixed Berry Crumble with a generous drizzle of the luscious Orange Custard.
- Garnish with the reserved orange zest for an extra burst of citrus flavor.
